Apple Pie


INGREDIENTS:

300g white spelt flour*

60g caster sugar

130g cold unsalted butter, cubed

1tsp baking powder

2tbsp sour cream or creme fresh*

3 egg yolks

1tbsp oil

2kg apples, cored and cubed

1tsp cinnamon

1/4 tsp ground cloves

50g-100g caster sugar

METHOD:

Pre heat oven at 180 degrees, 24cm round baking tin, lined with parchment paper, bottom only.

Place all the apples in a heavy pot, add a few tablespoons of water and stew for about 15 minutes. Depending on tartness of the apples, add between 50-100g caster sugar. 

In a bowl of standing mixer, place flour, baking powder, caster sugar, butter and with paddle attachment mix until it resembles bread crumbs.

Brownie Bites with Hazelnut Spread


INGREDIENTS:

For the brownie:

100g light soft muscovado sugar

90g 72% Venezuelan dark chocolate

110g unsalted butter

10g cacao powder

35ml water

2 eggs

45g rice flour*

30g ground almonds*

1tsp baking powder

1/4 tsp salt

hazelnut spread

 

Chocolate Glaze:

80g milk chocolate

2 tsps olive oil or melted butter

20g hazelnuts finely chopped, set aside 1 tbsp for decoration

METHOD:

Pre-heat the oven to 180°. Line 12 muffin cavity tin with muffin cases or grease with butter and dust with rice flour.
